Hello, everyone! My name is Kathy Escobio, welcome to my new food blog! As far back as I can remember, I have loved cooking and spending time in the kitchen.

I am not athletic, nor do I possess any special talents or abilities, so through the years, I have used my love of cooking as a creative outlet.   In my younger days I aspired to be a writer, so combining the two things I love seemed like a great idea, thus,  “Kathy in the Kitchen” was born.

I have always been surrounded by people who are great cooks…My dad was an excellent cook and prepared many of the family meals.  My mom, although a great cook, has turned her focus on sweets and is well known for her delicious cakes and desserts.  Both of my in-laws were good cooks and passed their skills on to my husband, who considers himself my biggest rival.  In our family, it is natural to see the men in the kitchen.

Married to my high school sweetheart for 39 years., my husband Anthony and I have two wonderful sons, Anthony, 38 and Eric 27.  My son, Anthony, has blessed me with two beautiful grandchildren, Andrew, 11 and AJ, 10 months.  Anyone who knows me, knows I love my boys!!

After working for an insurance company for nearly 38 years, I retired in June of 2009.  Crowded among my list of projects was finishing a cookbook I started many years ago.  In October 2010, I put the finishing touches on the book and submitted it for publishing.  I received my first order of cookbooks at the end of January, 2011 and within 6 weeks, had to place a second order for more.  Since the completion of book #1, I have been actively seeking out and preparing many new recipes, which has led to the beginning of “Volume II”.  (Don’t hold your breath…it may take me another 30 years to complete!)

My vision for this blog is still undefined.  I plan to decide as I go along, what works for me and what my followers (assuming I have any) are looking for.  So, sit tight, we will be exploring this new horizon together.
